    @cloudchaser07 Actually, it’s exactly the opposite. The more water it has, the more oil it’ll absorb.

    @cloudchaser07 Dehydrating the eggplants doesn’t mean that they will absorb less oil… on the contrary they will taste better because in this way you remove their bitterness. If you want them to absorb less oil just dry them with paper very well after frying. Otherwise try to cook them in a oven

    nice recipe but id skip the draining of the egg plant, id rather it has some water in it , this way it dos not absorb as much oil when fried.

    I’ve made this a few times, and one thing baffles me. How does anyone leave the skin on the eggplant on? It’s ruined all of my dishes, it’s impossible to eat. It’s more or less rubber in your food.

    Oh, nice tip to drain the water out of the eggplant! my mom does this recipe frequently, but the eggplant is always full of water and I HATE it, also she cooks it instead of frying, of course the eggplants will taste better when fried, tough its not so healthy.

    @Nadia2015 parmesan is not italian cheese is american genetic cheese. the real parmesan name is PARMIGGIANO REGGIANO !

    eggplant parmasan is sooooooooo gooooooooood, fry the egg plants, tastes way better then oven cooking them, the eggplatns taste better really really mushy, so def bake them for a while, you dont want them hard
    and def peel the edges off
    and speghetti sauce works FINEE, so easy its kinda like lasagna, sauce eggplant cheese, sauce eggplant sauce cheese
